On the border now here in Texas, we just bring the pintos to a rolling boil and slap on the lid and turn off the fire. Wait at least an hour, then slow cook them for another couple of hours.

Or, put them in the crock pot and cook them for forever. No spice, just water. We never add spices except salt, unless you want to spice them up at the end. Mainly just plain. We likes them plain with a little salt. Funny, huh? You would think otherwise on the border, but try it. They really are best just plain. Add the salt after you put them in the bowl to eat them.

Once done, you now have the bean base to anything you want. You can add short ribs to them and cook them some more, make refried (do that in an iron skillet with a little oil and water and mash and mash and mash with a potato masher), add some brisket and cook some more, add chili and garlic and powered chipotle and cook some more, whatever. Skies the limit.

Or just eat with a little salt. Our other favorite way to eat them is put them a bowl plain, add diced onion, diced tomato, little bit of grated japaleno, chopped cilantro, grated cheese (do it when the bean are hot so the cheese melts), small chunks of avocado, and a glop of sour cream. You can just eat it or dip it with corn chips or tostadoes or put it on a fresh made flour tortilla and roll it up like a burrito or taco. YUMMM.

I like to use them to make a bean sauce for enchiladas instead of the red sauce. I make my enchiladas with two kinds of grated squashes, chopped and sauteed mushrooms, grated jalapenos and grated serranos, two kinds of grated cheese, diced onion, comino powder, salt, a tiny bit of the sauce from a can of smoked chipotle peppers (VERY TINY), and chopped cilantro. You have to halfway cook the squash and mushrooms. Let it cool and then mix in all the other ingredients. Then you use this mess and roll it up in corn tortillas.

Dip the tortillas in boiling water real fast to soften them up enough to use them to roll up the enchiladas. Stick the enchildadas under the broiler for a short time to finish off cooking the stuff inside and then throw some bean sauce (don't completely mash the beans; there should be some beans in the bean sauce) on top plus some more grated cheese and stick under the broiler for a tiny time. Put guacamole and sour cream on top of that mess to finish. Or salsa, if you are insane. If you like, you can add small cooked shrimp to the mess you roll up. I like it with no shrimp. It is supposed to be damn hot. And, it is damn good. Clean you out the next day, for sure.
