The par boil is the most important part I find, depending on the size I want it ranges from about 2 to 5 mins in boiling water. Sometimes I go full retard though and just nuke some spuds in the microwave and break them up by hand so they are about bite size and throw them in the fryer. I find I get a better range of crunchiness across the gamut.
I use a lot of extra virgin Olive oil and Dripping for cooking, I only use natural oils and fats as that is what the body can break down.
I am against Canola as it was the first GM crop [ from GM rapeseed]
I don't eat margarine either, SAVE THE WHALES!
That par boiling works well fro me as well.
To be honest, I'd think twice about extra virgin olive oil!
Why? Why, because heating it to the levels required for frying changes the fatty acid chains. Tomorrow, when I have slept, I will post more info,
If you want to use olive oil, use the lower quality that has been heat extracted, this will not change it's fatty acid chains!
Until tomorrow, stay prepared, I'll be back!
Thanks for that a few have said something about Olive oil but no-one could tell me why, when I went back to cooking in Dripping for a while we actually lost weight.
Any good alternatives to Olive Oil, I hear peanut and avacardo is fashionable presently, I usually don't follow trends.
Good fun on that other thread some great stuff, Jake over and out!

Thanks MOM! Grey Lensman has been telling me coconut oil is the stuff but I didn't realize you can cook with it.
When I got my tattoo age 19 that was the recommended product to rub on as it cured and healed.

What is "Dripping"? I don't hear that term in the U.S. - is that animal fat? I use organic refined, High Heat Safflower Oil in my fryer for fries/chips and chicken wings.

Why not call em fries? Fries are just thin chips. They're different enough imo.
