Since there are only a total of 3 of us for dinner, I can do something a bit extravagant, last year we gorged out on king crab. But I need to pare down the expense this year, so I might try a prime rib. That would be a first for me.

In addition to au jus, I'm going to make creamy horseradish sauce.

For the taters, garlicky mashed? Or Duchess do aheads? The advantage obviously that you can make these ahead of time, and just pop them in the oven vs. struggling with mashing at the last minute.

Ali's Safe Gourmet Eggnog

As promised, the recipe for my famous Eggnog. I put this recipe together a few years ago from various recipes until it was 'perfect' (according to you guys).

1/3 cup sugar
2 egg yolks
1/4 teaspoon salt
4 cups whole milk (from a cow :) )
3 egg whites
3 tablespoons sugar
1 teaspoon vanilla extract (I use homemade. Do not use 'flavoring')
1/2 cup whipping cream, whipped
Nutmeg (I grate whole Nutmeg)

Beat sugar into egg yolks, add salt, stir in milk. Cook over medium heat, stirring constantly (a wire whisk works best), until mixture coats spoon. Cool, beat egg whites until foamy. Gradually add the sugar, beating to soft peaks. Add the custard and mix well. (Add Nutmeg to taste..if you plan on putting this in a punch bowl and sprinkling Nutmeg on top to garnish, adjust for that when adding Nutmeg to the mixture). Chill 3 or 4 hours. Pour into punch bowl or cups. Dot with dollops of whipped cream; sprinkle or grate Nutmeg on top. Serves 6 to 8.

Note: Most eggnog recipes use raw eggs. This eggnog is safe because the eggs are cooked into a 'custard'. *Raw eggs are used in labs to cultivate bacteria.

Christmas Rum Cake


1 Tsp. Sugar
1 or 2 Quarts of Rum
1 Cup Dried Fruit
Brown Sugar
1 Tsp. Soda
1 Cup Butter
2 Large Eggs
1 Cup Baking Powder
3 Juiced Lemons
1 Cup of Nuts

Before starting, sample rum to check quality. Good, isn't it? Now proceed.

Select large mixing bowl, measuring cup, etc.

Check rum again. It must be just right. To be sure rum is of proper quality, pour one level cup of rum into a glass and drink it as fast as you can. Repeat.

With electric mixer, beat 1 cup of butter in a large fluffy bowl.

Add 1 seaspoon of thusar and beat again.

Meanwhile, make sure rum is still alrighty. Try another cup. Open second quart if necessary.

Add leggs, 2 cups of fried druit and beat til high. If druit gets stuck in beaters, pry loose with drewscriber.

Sample rum again, checking for tonscisticity.

Next, sift 3 cups pepper or salt (really doesn't matter).

Sample rum.

Sift 1/2 pint lemon juice. Fold in chopped butter and strained nuts. Add 1 bablespoon of brown sugar-or whatever color you can find. Wix mell. Grease oven. Turn cake pan to 350 gredees. Pour mess into boven and ake.

Check run again and bo to ged.
