I roll it and stretch it, it takes some practice and finesse but I can do it quickly now.. then let it get a bit dry on the top side while it rises a bit more.. then flip it onto the wood peel and add sauce/toppings to the moist bottom side.

I've experimented with par baking but I've found that it's not necessary with a hot enough oven and pizza stone..

Not EVEN going to TRY until I have one of those.. because IF I decide to do SOMETHING I prefer to do it RIGHT, and have the right equipment on hand to ensure my success.

Crushed potato chips on top? And with peas in it? On top of a layer of melted cheddar cheese and that and the chips broiled to a light golden brown crust?

Any well stocked grocery store would have it in the spice section.
"Dion" spice brand sells it.
If not, dried limes or the powdered lime might substitute.

They're essential, absolutely. The crust is just superior if you use one, and aim for 500+ degrees.

Get one and try it! We can do a pizza thread and share ideas. I make pizza at least once a week, from scratch.. right down to the sauce. I've experimented with different types of flour, from spelt and Einkorn to semolina, etc.

I usually make a mixer-full of dough and freeze a portion while refrigerating a few for up to a week to kinda ferment the dough and improve the flavor.

I have a hardwood lump charcoal bbq converted to a pizza oven and quite often use just the kitchen oven, with plans to build a stone wood-fired pizza oven at some point.

It's a fun hobby:)

This is pretty neat, had a parent of a student give me a photo of the family and a Merry Christmas picture of them. She also included some toffee home made. My wife loves toffee.

I've got the grill going now, soon going to make my kids some burgers & dogs.

I haven't been grilling much lately.
