Another way of lookng at it shows the missng 1.

30 - 5 (discount) = 25

25 / 3 = 8.333r.

Because it isn't a whole number you will get a remainder, which adds up to the 1.

why should it equal 30?

it is very clever wording to deceive but the 2 dollars you kept is part of the 27 dollars they paid.
adding it to the 27 is just a random operation.
they paid 27, your 2 and the 25 gift.
