I looked at all the recipes here. All are horrrrrrrible!

Roma tomatoes are best, though they don't have to be imported as the same variety grows just fine in North America.

A few farmers in my area sell crates of marzanos in the fall.

The ones I bought were called marzano - lots of Italian immigrants where I live (about a third of the population and most moved post WWII). San Marzano is the region where they were originally cultivated, that is true, but there are farmers that grow them elsewhere as well. They are a distinct variety that are darker, more flavourful, fewer seed sections and a more elongated shape than other varieties of plum tomatoes.

It's like champagne. The variety grown in Champagne France is Champagne, the same grapes grown elsewhere, 'sparkling wine'.

Grill or Broil 1lb hot italian sausage (when done, set aside to cool and then slice on the bias into 1 inch pieces), sautee onion, garlic, and yellow pepper in a good amount of olive oil. Add a 28oz can of italian tomatoes, salt, pepper, oregano, basil, red pepper flakes and some sugar. Add sausage back into the pot, cover and simmer for 45 min- 1 hr.

I think it tastes better to refrigerate overnight at this point and reheat the next day. Flavors seem to meld together. Then cook pasta partially, drain and add into sauce to finish cooking (they soak up the flavor this way) Save a bit of the pasta cooking water incase you wan't to loosen up the sauce.

Add sliced dried tomatoes, garlic, red onion, thyme and oregano
When the onions are yellow add canned tomatos and more fresh herbs
Spice it up with black pepper and some nutmeg

Children may prefer the US [Frankenfood Genetic Modified to withstand mechanical picking and look ripe when not and taste terrible] tomatoes because they are sweeter.

Or start with sweet onion and use the good tomatoes.
