Pickled foods are most often fermented foods. Fermented foods are a natural way to grow probiotics. Probiotics feed the gut and helps produce the feel good hormone seratonin. I tend to think food cravings have something to do with the body seeking needed nutrition.

thats mental chuckle i have been suffering with depression for the last 4 years and taking SSRI's recently. My body has been telling me to have more of an uptake of seratonin. If true I'm amazed.

I never grew cucumbers before until this year. Even with a hobo gardening rig we got quite a few. Pops pickled them, my daughter loves pickles. I don't but they did turn out pretty good. We've got a few more jars in the fridge.

For some reason, fancy pickled stuff myself the last week or so, even went as far as pickling my own eggs, and a mix of onions, tomatos and cucumbers, pickle mad just lately.

Saying that just found an unopened jar of gherkins I had forgotten all about today, at the back of the cupboard.

Tried pickled garlic and it is very good. Seems the pickling reduces the boldness of the garlic, and I do like garlic, so this was pretty darn good.
.......but do NOT DO THE KIMCHI

You gotta try this recipe it is sort of a cross between sauerkraut and Japanese Steak House sour slaw. ITS AWESOME and it keeps for a few months in the fridge!!!!!!!!!!!! It is also VERY low carb! The benefits of vinegar in your diet is really important!!!

1 head of cabbage sliced very thin
5 cloves of garlic
4 cups water
1/2 cup extra virgin olive oil
1 tablespoon sea salt or Himalayan
4 bay leaves
10 peppercorns
5 cloves
1 cup white vinegar (can use apple cider vinegar)

In a pot add water, salt, bay leaf, cloves, peppercorns & olive oil.
Bring to a boil then simmer strong 10 minutes.
Strain out and discard spices with a fine mesh strainer.
Turn off heat and stir in vinegar.
Let it cool ten minutes.

Cut cabbage into 4 parts. Remove the top outermost leaves. Cut out the small hard core of it. Slice it thin with a sharp knife.
Place it all in a large bowl with the liquid and mix well. Let it sit overnight in the refrigerator covered. Stir it one time while it rests.

Add to your giant ball jars or tight sealed containers but leave about 1/4" room on top if vacuume sealing. I will add a little uncooked white vinegar up to the slaw level.

This recipe makes 3-4 large ball jars. We like to double this because it keeps so long and trust me when I tell you to let it sit 1 week sealed before opening because the flavor is absolutely incredible!!!!!!!!!!!

Northwoods Inn Red Slaw

1/2 cup vegetable oil
1/2 cup red wine vinegar, plus
2 tablespoons red wine vinegar
3 tablespoons sugar or 3 packets of stevia if low carbing

2 teaspoon seasoning salt, i.e. Lawry's
1/4+ teaspoon black pepper
1/4 teaspoon onion powder
1/2 head red cabbage, very thinly sliced

Directions:

Combine oil, vinegar, sugar, salt, seasoned salt, pepper and onion powder in a bowl. Pour over cabbage; mix well and then chill overnight.

Anyone reading this... if you look at this and go meh... I understand! but I swear to you... SWEAR TO YOU! Something magical happens when you make this and let it sit over night!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
