Not to say making your own is not better even healthier but some of those recipes are pretty extensive and labor involved. Unless you have a lot of time to shop for ingredients, store it properly prep with 12 ingredients I say look for a good substitute.

I think if you look a bit you can find it and say "needs more this" and perfecto! You got it!

Starts with imported Italian tomatoes.

It is amazing to me that this thread has gone this far without anyone saying what is blindingly obvious to Italian Food lovers.

American tomatoes SUCK BIG TIME!



A little olive oil with some garlic and herbs sauteed in a pan, topped with one or more cans/boxes of Italian Tomatoes and simmered for little while.

Cook the pasta until done, drain, and mix with the sauce in the same pan.

Plate, cover with cheese, and place under the broiler for a minute or so.



Anyone who gives you an Italian recipe with American tomatoes knows NOTHING!

I have been using the imported tomatoes for maybe seven years now. Once in a while I go out to dinner at an Italian place [Not my choice].

The red sauce SUCKS!

Mine is better than any sauce I have eaten at a restaurant. The 40 dollar a plate place came close, but not quite. All the others were obviously using American tomatoes and it sucked. One I sent back.


Yes, My sauce is better than any you can buy. And the biggest secret is the tomatoes.

I refuse to eat Italian made with American tomatoes ever again. If I go out, I have white sauce that isn't as good as mine either!

Maybe I should have said that the issue is not that Italian tomatoes are so much better.

The issue is that American tomatoes suck big time. They have been bred and genetically modified to produce a tomato that is red when it isn't ripe and doesn't mind rough machines picking them, and stays fresh looking up until it falls apart from rot.

The Italian tomatoes are bred for flavor. Less sugar, less acid, more tomato flavor.

But be careful. After you switch you may not enjoy that local Italian place any more.

I make sauce once every 6 months and either 'water bath can it' in jars (quart) or freeze it. I don't add meat until it's thawed or opened because it seems safer that way, especially 'canned' in the jars.

When I water bath can it, I always put a fresh Bay Leaf in before I seal it and a few extra herbs on top.

Once you've had homemade it's hard to go back store bought sauce. It's a bit involved to put it together but peeling the tomatoes is the most time consuming part.

There's old belief that the longer you cook it, the less calories it has. I don't see how that could be true though. I only cook mine for a day.
