tapiocha starch and arrowroot are good thickeners...and sweet potatoes or squash (ie butternut, buttercup, acorn, etc), are good to make bread with the flours, and use quinoa as well. There are some other grain-free flours out there...almond flour, coconut flour....

There's a good abundance of ideas if you do the legwork and search it all.

They might not be immediately appealing to you and it could take a while to adjust.

Beans and nuts/seeds...all are a good basis both for burgers, and the seeds blended/processed with various veggies are good to make crackers or bread that's dehydrated or baked on a low temp for a while.

There's a lot available, just research.

The original non-gmo stuff, if at all possible. So far no to soybeans and corn because it just isn't possible anymore...the rest still can find, but getting harder to find.

Went on Keto this summer.

Every supper meal was steak/pork chops/hamburger with a side of fried veggies (caramelized onions and peppers will make anything taste good).

Lunches and snacks were cheese, nuts, pepperoni sticks, deli meat.

Never felt better in my life.

Went off it this month because there were too many food events (birthdays, thanksgiving, halloween) and am back to eating grains. Feel like absolute sh*t. Tired, groggy, irritable, no energy, psoriasis flaring up...

Can't wait until it this month is over...

Had to change diet girlfriend has Rheumatoid Arthritis so we went to Autoimmune Paleo diet from advice of a very good doctor who doesnt believe in pharmaceuticals.

Eat like our ancients: no processed food, clean meats fruits and veggies organic as much as pos. (whatever is in ground ends up in plant so no chemicals during growing)

I purchased a good cook book and still use it to this day. Mickey Trescott The Autoimmune Paleo Cookbook: An Allergen-Free Approach to Managing Chronic Illness

My gf still has to take RA drugs but it is slowly being limited. We still cheat with bad foods but are getting better.
