Yeast alone cannot make a flavorful crust. You need a culture. The difference between a culture crust and a yeast crust is huge. I can't imagine ever again making a pizza with yeast.

Yes, fake tomatoes. Adding a label that says San Marzano DOP triples the price.

I only buy Cento or Nina myself. I know there are other brands that can be trusted, but I can get those around here from reputable shops.

I just put the link up, I wouldn't buy either online...You can find Strianese in some of the good old Italian grocery stores/shops. I think there is even a proof of authenticity on the cans....You need to get a fresh batch or they become tinny tasting...Over a year old and might as well get something else. same goes for any imported Italian tomatoes.
